Sourdough - Burnt Toast

We try and be as sustainable as possible, here we re-use any sourdough loafs we have not sold, we slice then heavily toast the bread, we then smash it up and re-hydrate, then adding this porridge like consistency to our fresh sour dough mix...... this gives the bread a rich umami flavour, malt like, amazing with 4 rashers of smoked bacon
